I'm just starting and cannot find a way to create a multi-part score (6 parts). Also, can't seem to find a way to draw bars vertically across multiple staves

In the help file contents, click on "Features/Staves and Braces". The "Multiple Parts and Braces" topic has more information. If you're using the free Solo Edition, you need to be in demo mode (menu option "Setup/Demo") to have more than 2 staves in a brace.
